Learn how to make Guatemalan Chilaquilas with KSP and Jose Spillari!
Recently, Chef Jose Spillari of Paseo Chapin taught Koreatown Storytelling Program & KYCC Bridge Students how to make Guatemalan Chilaquilas. The chilaquilas consisted of chayote and queso fresco fried in an egg batter and topped with a delicious roasted salsa. Jose was a joy to have as a culinary guide and we learned so much from him about how to make food as well as his own food memories and stories. We encourage you to make Jose’s delicious chilaquilas!
Foodmaking and the connections formed over cooking and sharing a meal show us the importance of intergenerational work and bringing generations together to work together and learn from each other.
This project is supported in part by the National Endowment for the Arts.
