Make Kimchi Pancakes w/ Ms. Cathy and KSP!
Welcome back to Part 2 of our Kimchi Pancake series with Ms. Cathy! KSP participants and staff had a great evening of cooking and learning as Ms. Cathy led us through her kimchi pancake. 김치 부침개/김치 전 (Kimchi Pancakes)
Base Ingredients
½ Head of Kimchi
¼ Cup of Kimchi Brine/Juice
1 Bundle of Leeks
¼ Flour/Korean Pancake Mix
¼ Frying Mix
½ Cup Water
½ Thinly Chopped Onions
Vegetable Oil
Any choice of Meat/Veggies
Dipping Side Sauce
¼ Cup of Soy Sauce
¼ Cup of Vinegar
Tablespoon of Sesame Oil
Tablespoon of Sesame Seeds
Steps
Combine all ingredients in a bowl
Add enough oil to coat the pan
Pour batter in and make a large circle
Cook until sides start to crisp up (5 min)
Flip and add oil around the edge of the skillet (Lift the pancake and let oil under)
Cook until the bottom of the pancake is crispy (3-5 Mins)
Flip again and cook (1 min)
Serve!
